Stir in the heavy cream and vanilla. Freeze in an airtight container until frozen. Stir the cookie bits into the soft ice cream and serve immediately. Cheesy Vegetable Jacket Potatoes: Ingredients For Roasting: Potatoes 4 large Salt to taste Oil 1 tbsp For The Filling: Carrot, chopped 1 Green Peas, cooked ¼ cup Corn, boiled ¼ cup Capsicum, chopped 1 Spring Onions, chopped 2 Dried Herbs 1 tsp Chili flakes ½ tsp Salt to taste Cheese, grated ½ cup Cheese, for topping ¼ cup Method: For roasting, apply salt and oil to the potatoes. Roast the potatoes at 180degrees C for 40 minutes or until skin is crisp. Remove from oven and let it cool a bit. Cut the potatoes in half. Using a spoon, carefully scoop out the middle of the potato, leaving the skin unbroken. Place the scooped potato into a mixing bowl, mash well. To this add carrot, green peas, corn, capsicum, spring onion, herbs, chili flakes, salt, ½ cup cheese and mix well. Using a spoon, scoop the mixture back into the potato jackets. Sprinkle with cheese and place on a baking tray. Bake for 10-15 minutes or until cheese melts.'
